Ana Mandara
The words Ana Mandara translate as "beautiful refuge," specifically one described in a 700 year old Vietnamese story as the tropical sanctuary enjoyed by a courageous warrior and a princess whose love for each other caused them to be shunned by their family and peers. Of great solace to them was the culinary bounty of the land and sea that was to be found in Ana Mandara.By Aline Ho and Peter McGinley, the main dining area is a breathtaking space that is at once elegant and casual.
Architectural elements were designed to evoke Vietnam's rich cultural heritage, from the traditional to the colonial. The combination of level changes subtle textures and warm lighting result in an intimate ambiance that captures the romance of a bygone era while maintaining a freshness that is undeniably modern. Decorative accents including artifacts and antiques, intricate carvings, pottery, fountains and tropical foliage complete an authentic Vietnamese experience that is carried through to the design of the uniforms, linens and tableware.
Relax for a cocktail and specially-selected appetizers in Ana Mandara's Cham Bar. Groove to the sounds of the Eric Kurtzrock Trio, with world-renowed pianist Peter Horvath and Gary Brown Thursday through Saturday evenings.
Cuisine:
Ana Mandara's Executive Chef is Khai Duong, a classically trained chef and a native of Nha-Trang Vietnam. His success has come from his ability to prepare classic Vietnamese recipes using French technique and reflecting American style. Chef Duong is a summa cum laude graduate of Le Cordon Bleu Academie Culinaire de Paris.
