Executive Chef

Cetrella is delighted to welcome back Robert Holt in his expanded role as the restaurant's new Executive Chef. With a 16-year professional career working in prominent kitchens, Holt pursued a career path taking him from earlier days in Dallas, TX, Cambridge, MA and Rockland, ME, through in-depth local training in Mediterranean and California cuisine. As Sous Chef at prized San Francisco restaurants, Holt worked under the guidance of Chefs Joyce Goldstein at Square One, Nancy Oakes at Boulevard, and Suzette Gresham at Acquerello, rated one of Wine Spectator's 10 best Italian restaurants in the U.S.

Rejoining Cetrella to build on his valuable contributions here as Chef de Cuisine from 2004-2006, Holt will now lead our 3-Star kitchen, refreshing its rustic Mediterranean cuisine with new seasonal menus. Holt will guide his staff in our state-of-the-art exhibition kitchen, equipped with a wood-burning oven, a French Rotisserie, and Spanish Plancha and mesquite grills.

Cetrella chefs have taken great care to build longstanding relationships with our Coastside specialty farmers and producers of fine gourmet foods. Our menus vary to reflect their seasonal bounty and to guarantee freshness and variety. For five and a half years, our kitchen has produced its own charcuterie, pasta, smoked fish, signature bread, pastries, ice cream, and fresh fruit sorbets. Prized Bay Area and European cheeses are selected and stored in our Cheese Room, then used as menu ingredients and featured in our after-dinner Cheese Menu.
